I know, I KNOW I just posted a waffle recipe but that is a basic healthy one.  This one is my favorite!  I’m not even really a waffle fan but yum yummy yum!  Andy, Sylvie, Zoe, and Rob all sampled today and what a success.  Made with wheat (and white) flour, a little honey and milk, eggs and bananas – this is my new go to somewhat healthy breakfast.  Psyched.  Yeah, there is butter and I add the chocolate chips – but I’m trying.  (Blueberries would be a good choice too.)  Sylvie and Zoe want to stay home for lunch today so they can eat them again!  This recipe is from my new Vitamix mixer.  The recipe book has so many great things to try.  Made a delicious whole fruit margarita that Judy, my basically non-drinking friend, slurped down.  Also made great pancakes (with apples – although you wouldn’t know) but haven’t written them up because I think most people don’t have a Vitamix.  But I do think that you can make this one in a regular blender as the bananas and other ingredients are soft and easily mixable.  You can lmk how it goes.  Hopefully well!  Remember to let the extra waffles cool, then wrap and freeze for a quick breakfast once school starts.  Enjoy –

Rachel – my number one reader and tester and typo pointer outer said they were delicious!  She said super fluffy and she didn’t add the chips and her kids loved them 🙂

banana waffles (from the Vitamix recipe book):

1 cup (125 g) all purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon salt
3 eggs
1 1/2 cups low fat milk (or soy milk)
2 ripe bananas
3 tablespoons butter (melted and cooled  if using a blender…but in Vitamix you do not need to melt)
2 tablespoons honey (or sugar)

Whisk together the flours, baking powder and salt in a medium sized bowl and set aside.

In this order, place the eggs, milk, banana, melted butter and honey into the Vitamix (Now here you try your blender – or even food processor).  Blend on high for 20 second (may take longer with a regular blender – mix until smooth).

Pour the wet ingredients into the dry and fold gently until dry ingredients incorporated.

Let the batter rest for 10 minutes.  Then cook as instructed by waffle maker.

Easy!

    ooh- I heard about these!!! I need to get a wafflemaker for my new house-love the healthy bananas mixed in!!! Keep blogging girlfriend!
